Pastry Chef

As a Pollen pastry chef you will have a deep-rooted interest in Pastry- Viennoiserie and Patisserie. With a keen eye for detail and outstanding quality, you’ll bring enthusiasm, creative passion and a strong drive to develop across both disciplines as our brand grows.

Under the guidance of our senior pastry team you will play an essential part in realising the vision created by the Founders and senior management, contributing ideas, creating new products and constantly evolving your skills within the distinctly refined aesthetic of the Pollen style.

THE ROLE:
• Working across Patisserie and Viennoiserie departments: dough lamination, shaping, baking
• Efficiently managing and ensuring completion of daily & weekly prep tasks
• Management and completion of food safety processes, daily/weekly record keeping
• Processing wholesale product dispatch
• Product ordering and managing deliveries into the business
• Quality control management on incoming produce and ingredients
• Product development: contributing creatively to keep our product range evolving

ABOUT YOU:
• Minimum of 1 year experience in a pastry role, intermediate knowledge of Patisserie and/or Viennoiserie
• Keen eye for detail and consistency, obsessive about quality
• Highly organised and able to work efficiently and collaboratively as part of a small team
• Passionate and knowledgeable about our industry and contemporaries
• Proactive about your own development and keen to grow with our business

Salary: Up to £26k

Chef de Partie

We are currently seeking an experienced Chef de Partie to join our expanding kitchen team.

As a Pollen CDP you will bring enthusiasm, drive and share in our passion for uncompromising quality. Working with our senior team you will collaborate and help to create and deliver a menu of beautiful, refined dishes with the best seasonal produce to keep our menu continually evolving.

WHAT YOU’LL BE DOING:
• Working closely with the senior kitchen and front of house team to deliver the highest standards and quality across all dishes and produce
• Efficiently managing, prioritising and ensuring completion of daily & weekly prep tasks
• Completion of daily/weekly cleaning tasks, keeping the kitchen organised, tidy and safe
• Ensuring compliance with food and health and safety regulations
• Product development: contributing creatively to keep our menus evolving
• Stock control and rotation, communicating orders to senior kitchen team

ABOUT YOU:
• Minimum of 1 year professional kitchen experience working with fresh produce
• Comfortable under pressure, able to prioritise and plan ahead
• Collaborative and positive, able to work efficiently as part of a small team
• Keen eye for detail and consistency, obsessive about quality
• Highly organised and able to work efficiently in a compact space
• Passionate about seasonality, quality and new product development
• Proactive about your own development and keen to grow with our business

Salary: £12/hr
